- 1/4 cup of pumpkin seeds
- 2 tablespoons of cranberries
- 1 cup of arugula
- 1/2 avocado, peeled and sliced
- 1/4 cup of brussel sprouts, chopped
- 1 tablespoon of olive oil
- 4 tablespoons of wine vinegar
- 1 cup of cauliflower, chopped
Instructions:
- Bake the brussel sprouts, pumpkin seeds and cauliflower for 40 minutes simultaneously.
- Take the roasted ingredients and combine it with the others in a bowl.
- Make the dressing.
- Pour the dressing over the salad.
- Mix well and serve.
