Ingredients:
- 1 cup of spinach leaves
- 8 tablespoons of walnuts
- 4 tablespoons of lemon juice
- 1/2 cup of pink lentils
- 1 clove of garlic, peeled and chopped
- 3 portobello mushrooms, chopped
- 3 tablespoons of dijon mustard
- 1 tablespoon of honey
Instructions:
- Boil the pink lentils for 20 minuets.
- Take the pink lentils out of the steamer.
- Put the spinach leaves, walnuts and lentils together in a bowl.
- Cook the portobello mushrooms until brown.
- Add the mushrooms to the lentils, spinach leaves and walnuts.
- Add all the other ingredients to the lentils, spinach leaves and walnuts.
- Mix well and serve.
