Arugula pasta salad

Ingredients:

  1. 1 cup of fresh arugula
  2. 1 cup of pasta, boiled
  3. 2 tablespoons of olive oil
  4. 4 tablespoons of roasted pumpkin seeds
  5. 1 cup of basil
  6. 1/3 cup of cheese
  7. 1/4 cup of cherry tomatoes, chopped
  8. 2 tablespoons of wine vinegar
  9. 2 tablespoons of lemon juice
  10. 1/4 cup of chopped cashew nuts
  11. 1 cup of roasted mushrooms

Instructions:

  1. Grind the basil, olive oil, lemon, and cheese to make the pesto.
  2. Combine the rest of the ingredients in a bowl
  3. Add the pesto to the pasta and veggies.
  4. Add the vinegar to the pasta salad.
  5. Serve
