Ingredients:
- 1 cup of fresh arugula
- 1 cup of pasta, boiled
- 2 tablespoons of olive oil
- 4 tablespoons of roasted pumpkin seeds
- 1 cup of basil
- 1/3 cup of cheese
- 1/4 cup of cherry tomatoes, chopped
- 2 tablespoons of wine vinegar
- 2 tablespoons of lemon juice
- 1/4 cup of chopped cashew nuts
- 1 cup of roasted mushrooms
Instructions:
- Grind the basil, olive oil, lemon, and cheese to make the pesto.
- Combine the rest of the ingredients in a bowl
- Add the pesto to the pasta and veggies.
- Add the vinegar to the pasta salad.
- Serve
