Ingredients:
- 1 brocoli floret, without the stem
- 1 cup of cashew cream
- 4 tablespoons of white wine vinegar
- 1 tablespoon of olive oil
- 1 cup of dry lentils
Instructions:
- Boil the lentils for 15-20 minuets.
- Chop the brocoli finely.
- Put the lentils and brocoli in a bowl.
- Mix the cashew cream with the brocoli and lentils.
- Make the dressing using the rest of the ingredients.
- Pour the dressing over the salad.
- Mix well and serve.
