Ingredients:
- 1 cup of lentils, steamed
- 1/4 cup of breadcrumbs
- 3 tablespoons of olive oil
- 2 tablespoons of lemon juice
- 1 cup of fresh basil leaves.
Instructions:
- In a food processor combine the Ingredients and blend until the mixture is chunky and appropriate for the balls.
- Roll the mixture in to balls using your palms.
- Spread a sheet of parchment paper over a baking sheet.
- Spread the balls over the baking sheet but don’t crowd them.
- Drizzle all sides of the balls with olive oil and bake at 375 F for 30-45 minutes.
- Make sure all sides are brown, if they are not bake on the other side for 15-20 more minutes.
- Enjoy with pasta!
