Piyush is the marathi version of lassi and is a popular drink in the state of Maharastra. I first learned about this drink after trying this in a Marathi restuarant in Mumbai, named Aaswad (formally called “Aaswad Upahar & Mithai Gruh.”)
Ingredients:
- 1 cup of yogurt
- 2 cups of cow milk
- 4 tablespoons of cooked saffron
- 1/4 cup of cane sugar
- 2 tablespoons of cardamom
- 3 tablespoons of rose syrup
Instructions:
- Cook the sugar on a low flame until it turns into a syruppy texture and add a little water to it once its off the pan.
- Put the rest of the ingredients in a blender in the meawhile.
- Now add the sugar syrup (that you made in step 1) to the blender.
- Blend!
- Serve!
