Ingredients:
- 1 cup of brussel sprouts, chopped.
- 1 cup of arugula
- 1/3 cup of chopped celery.
- 1/4 cup of mushrooms, chopped.
- 1 clove of chopped and peeled garlic
- 1 teaspoon of olive oil
- 1 tablespoon of lemon juice
Instructions:
- Roast the brussel sprouts and mushrooms for 30 minutes.
- Mix the lemon and olive oil.
- Add the rest of the ingredients to a bowl, all together.
- Add the roasted veggies and the dressing to that bowl.
- Mix and serve!
