Brussel sprouts salad

Ingredients:

  1. 1 cup of brussel sprouts, chopped.
  2. 1 cup of arugula
  3. 1/3 cup of chopped celery.
  4. 1/4 cup of mushrooms, chopped.
  5. 1 clove of chopped and peeled garlic
  6. 1 teaspoon of olive oil
  7. 1 tablespoon of lemon juice

Instructions:

  1. Roast the brussel sprouts and mushrooms for 30 minutes.
  2. Mix the lemon and olive oil.
  3. Add the rest of the ingredients to a bowl, all together.
  4. Add the roasted veggies and the dressing to that bowl.
  5. Mix and serve!
