Ingredients:
- 1 cup of almond flour
- 1 zuchini, chopped finely and thinly
- 2 tablespoons of chilli flakes
- 4 tablespoons of red wine vinegar
- 2 tablespoons of olive oil
- 1 clove of garlic
- 1 pound of basil
- 2 eggs
- 1 avocado peeled
- 4 tablespoons of lemon juice
Instructions:
- Mix the eggs, flour, olive oil, zuchini, chilli flakes, and red wine vinegar in a bowl well.
- In a food processer combine the rest of the ingredients until the puree is smooth.
- Add the basil puree to the batter and mix them well together.
- Bake at 375 F for an hour.
- Let the bread cool.
- Mash the avocado and mix it with the lemon juice in a bowl.
- Spread the avocado cream all over the zuchini cake.
- Slice the cake and serve imenently.
