Ingredients:
- 1 cup of brown lentils
- 1 cup of fresh arugula
- 2 tablespoons of lemon juice
- 1 tablespoon of olive oil
- 1 cup of finely chopped almonds
- 1 sweet potato, chopped
- 2 tablespoons of hemp hearts
Instructions:
- Boil the lentils for 15-20 minuets
- Let the lentils cool.
- Preheat the oven to 350 F.
- On a tray with parchment paper put the potatoes and drizzle them with salt with olive oil.
- Bake the sweet potatoes for 25-30 minuets.
- Take the lentils and potatoes and combine them together in a bowl (but let them cool first.)
- Chop the arugula and combine it with the lentils and sweet potatoes.
- Mix the olive oil, lemon, and hemp hearts together to make the dressing.
- Pour the dressing over the salad.
- Toss and serve.
