Healthy vegan rose lassi

  1. 1 cup of almond milk
  2. 1 tablespoon of cardamom powder
  3. 2 teaspoons of salt
  4. 2 cups of organic plain vegan vanilla ice cream
  5. 5 spoons of rose syrup
  6. 3 spoons of rose powder

Instructions:

  1. Put all the ingredients (almond milk, cardamom powder, salt, vanilla ice cream, rose syrup, and rose powder) in a blender and blend until you have a smoothie (feel free to add more ice if you want your lassi to be colder).
  2. Serve and enjoy!

Vegan mango kulfi

  1. 1 cup of frozen mango chunks
  2. 1 tablespoon of cardamom powder
  3. 2 tablespoons of rose syrup
  4. 1/2 cup of almond milk
  5. 2 teaspoons of salt

Instructions:

  1. Put all the ingredients (mango chunks, salt, syrup, cardamom powder, and almond milk) into a blender and blend until you have a puree mixture.
  2. Pour the mixture (which was created by the previous step) into popsicle molds
  3. Freeze your kulfis until your kulfis form (they should be a similar texture to popsicles. This will take about 6 hours to a day).
  4. Enjoy!

Healthy Indian watermelon popsicles

  1. 2 cups of watermelon pieces (with watermelon chopped and cut into pieces (DON’T INCLUDE THE SKIN, ONLY THE PINK FLESH OF THE WATERMELON SHOULD BE INCLUDED )
  2. 1 tablespoon of amchur powder (indian mango powder)
  3. 1 tablespoon of chat masala (find at your local store).
  4. 1 banana, peeled and copped into peices (NOTE: DO NOT INCLUDE THE BANANA PEEL FOR THE PURPOSE OF THIS RECIPE)
  5. 1 tablespoon of lemon juice

Instructions:

  1. Put all the ingredients (chopped watermelon pieces, amchur powder, chat masala, the chopped banana pieces, lemon juice, and lemon juice) in a blender and blend until the mixture of those ingredients becomes a proper puree.
  2. Pour the puree into your popsicle molds and freeze your popsicles until the popsicles form (this will take about 4-5 hours or even a full day).
  3. Serve your popsicles with anything of your choice.

My favorite gola ganda

A gola is an indian ice lollipop and is widely popular during hot summers in India. There are so many flavors of gola which you will absolutely enjoy. You can use modifications based on your flavor of prefrence when you make your gola. But today we are making a rose gola.

Ingredients:

1 bowl of ice (this will make about 3 golas)

1 cup of rose syrup (if you don’t have that just mix rose syrup with sugar and cook it on a flame)

Instructions:

  1. Heat the rose syrup with a little bit of water.
  2. When the consistency is liquidy, take it off the flame. Let it cool for a bit.
  3. Blend the ice into snow.
  4. Put the snow in different cups. Insert a stick and shape the snow cones like popsicles.
  5. Drizzle the rose syrup on each snow cone, but you can use different flavors for different snow cones if that is what you prefer.
  6. Serve right away!

Famous sprout chaat

  1. 1 cup of sev
  2. 1 cup of cold sprouts, cold (called moong in hindi)
  3. 4 spoons of sweet chutney
  4. 2 spoons of spicy chutney
  5. 1 spoon of chili powder
  6. 2 tabelspoons of mango (amchur) powder
  7. 5 spoons of cilantro
  8. 3 spoons of chopped onions
  9. 1 cup of yogurt
  10. 2 tablespoons of lemon juice
  11. 2 cooked potatoes, peeled and diced
  12. 8 golgappas (you might want to look this up and buy it at an indian store)

Instructions:

  1. In a bowl, combine the moong, potatoes, onions, lemon juice and cilantro and mix (please do not mix with a spoon because that will damage the mixture).
  2. In a different bowl, thoroughly mix the amchur powder, yogurt, and chili powder.
  3. In each golgappa put the stuffing in, then add the sweet and spicy chutneys. Finally, top it with the yogurt and sprinkle a dash of sev.
  4. Repeat the process for the other golgappas.
  5. Top all the golgappas with a layer of yogurt, sweet and spicy cutneys, and sev.
  6. Enjoy!

Gujurati carrot pickle

Ingredients:

  1. 2 carrots
  2. 2 chillies, tall
  3. 5 spoons of oil
  4. 2 tablespoons of chili powder
  5. 2 tablespoons of mustard seeds
  6. 2 tablespoons of tamarind
  7. 3 spoons of lemon juice
  8. 2 teaspoons of of sugar
  9. Salt to taste (about a teaspoon or two)

Instructions:

  1. Chop the carrots and chilies into matchsticks.
  2. Mix the rest of the ingredients together (and well) in a large bowl.
  3. put the carrots and chillies with the mixture.
  4. Mix the carrots in chilies in the mixture using you hands (DO NOT use a metal spoon).
  5. Serve with Gujurati dishes and enjoy!

Coconut lychee popsicles

Ingredients:

  1. 1 cup of organic lychee juice (DO NOT use canned juice)
  2. 2.5 cups of fresh coconut milk
  3. 1 cup of coconut meat
  4. Lychee fruits (to serve)

Instructions:

  1. Puree the coconut meat until it has a rough sauce like texture.
  2. Mix the lychee juice and coconut milk thoroughly.
  3. Once the lychee juice and coconut milk are mixed add the coconut meat (spoon by spoon).
  4. Mix the ingredients in the bowl.
  5. Pour the mixture into molds and freeze overnight.
  6. Let the popsicles thaw and serve with lychee fruits.
  7. Enjoy!

Note:

*Please don’t forget to put the remaining popsicles back in the freezer. They will melt otherwise.
