Okra sabzi (okra veggie curry)

Ingredients:

  1. 2 cups of okra, chopped and NOT INCLUDING THE HEADS
  2. 3 tablespoons of cumin powder
  3. 1 garlic clove, peeled and chopped finely
  4. 2 tablespoons of turmeric
  5. 5 tablespoons of lemon juice
  6. 3 tablespoons of shredded coconut
  7. 2 tablespoons of fengugreek powder
  8. 2 tablespoons of avocado oil
  9. 1 tablespoon of mustard seeds

Instructions:

  1. Heat a pan on a low flame and add the avocado oil to it once its heated.
  2. Add the mustard seeds to the pan and wait for them to sizzle.
  3. Now add the chopped garlic clove, cumin powder, fenugreek powder and turmeric to the pan and give it a quick stir.
  4. Add the okra and shredded coconut to the pan and let them cook until the okra is soft (that’s a sign its cooked well!).
  5. Finally, add your lemon juice to the pan.
  6. Give the dish a quick stir.
  7. Let your dish cool and serve.

Indian rose ice cream (vegan)

Ingredients:

  1. 2 cups of almond milk
  2. 1/2 cup of rose syrup
  3. 4 tablespoons of cardamom powder
  4. 1/2 cup of edible rose petals
  5. 2 tablespoons of rose sugar
  6. 1/4 cup of almonds
  7. 2 tablespoons of lemon juice

Instructions:

  1. Combine all the ingredients and blend into a puree like texture.
    • Note: If you are having trouble blending into this puree like texture, you might want to add a little water every now and then and blend multiple times till you get that puree like texture.
  2. Now take the mixture (that you created after blending the ingredients) and put in a churner.
  3. Churn the mixture until it forms into an ice cream like texture.
  4. Serve!

Rose basil seed drink

Ingredients:

  1. 3 cups of water
  2. 1 cup of rose syrup
  3. 1.5 cups of basil seeds
  4. 6 tablespoons of lemon juice
  5. 4 tablespoons of mint leaves
  6. Serve with Ice cream a float (optional).

Instructions:

  1. Add the water, rose syrup, and lemon juice to a drinking glass and mix.
  2. Now add the rest of the ingredients to that glass (with the water,rose syrup, and lemon juice) and mix well and thoroughly.
  3. Serve with Ice cream afloat (optional).

An adapted version of marathi piyush

Piyush is the marathi version of lassi and is a popular drink in the state of Maharastra. I first learned about this drink after trying this in a Marathi restuarant in Mumbai, named Aaswad (formally called “Aaswad Upahar & Mithai Gruh.”)

Ingredients:

  1. 1 cup of yogurt
  2. 2 cups of cow milk
  3. 4 tablespoons of cooked saffron
  4. 1/4 cup of cane sugar
  5. 2 tablespoons of cardamom
  6. 3 tablespoons of rose syrup

Instructions:

  1. Cook the sugar on a low flame until it turns into a syruppy texture and add a little water to it once its off the pan.
  2. Put the rest of the ingredients in a blender in the meawhile.
  3. Now add the sugar syrup (that you made in step 1) to the blender.
  4. Blend!
  5. Serve!

Naina Aunty’s Indian mango dessert (this desert known as amras in Gujurati)

Ingredients:

  1. 2 cups of mango flesh (from sweet mangoes)
  2. 3 tablespoons of cardamom powder
  3. 4 tablespoons of lemon juice
  4. 1 tablespoon of salt
  5. 2 tablespoons of rose water (optional and its my twist).

Instructions:

  1. Put all the ingredients in a blender and blend into puree.
  2. Serve!

Sweet Indian rose jelly pudding

  1. 1/2 cup of water
  2. 5 tablespoons of agar agar jelly
  3. 1 cup of cow’s milk (I used A2 milk but use almond milk if you are vegan)
  4. 1/4 cup of rose syrup
  5. 2 tablespoons of cardamom powder

Instructions:

  1. On a low flame, cook all the ingredients in a pot until the agar agar jelly has dissolved and the mixture is hot and is mixed thoroughly.
  2. Pour your mixture into small individuals bowl and keep those in the fridge for about 2-3 hours at least.
  3. Serve and enjoy!!

Raw mango raita

Ingredients:

  1. 1/2 cup of raw mango, peeled and chopped finely
  2. 2 cups of yogurt
  3. 4 tablespoons of amchur (mango) powder
  4. 4 tablespoons of cumin powder
  5. 3 tablespoons of black salt
  6. 3 garlic cloves, peeled and roasted
  7. 1/4 cup of cucumbers, peeled and chopped
  8. 1 cup of cilantro leaves

Instructions:

  1. Mash the two garlic cloves into a garlic paste.
  2. Except for the garlic (which we made into a paste), put all the other ingredients in a bowl and mix well.
  3. Add the garlic paste to the raitha (ie add the garlic paste to the other ingredients in that bowl in which you put them).
  4. Now mix the raitha (ie the mixture of the ingredients inside it) well.
  5. Serve

Cucumber raita

Ingredients:

  1. 1/2 cup of chopped and peeled cucumber pieces
  2. 2 tablespoons of amchur (mango) powder
  3. 1 tablespoon of black salt
  4. 2 cups of yogurt
  5. 1 garlic clove, peeled and roasted
  6. 1/4 cup of cilantro leaves
  7. 2 tablespoons of cumin powder.
  8. 1/8 cup of chopped mint leaves

Instructions:

  1. Mash in the garlic into a paste like texture.
  2. Except for the garlic put all the other ingredients and a bowl and then give it a quick stir.
  3. Add the garlic to the raitha (ie the ingredients in the bowl from step 2) and give the raitha another stir.
  4. Serve!

Grape raita recipe

Raita is a type of yogurt sauce used in India. There are many types of raithas- cucumber raitha, grape raitha, spinach, raitas, and so many other types of raitha’s. Today, im going to show how to make grape raitha.

Ingreidents:

  1. 1/2 cup of grapes, chopped (and in this case each grape should be cut into half.
  2. 2 tablespoons of cumin powder
  3. 1 tablespoon of black salt
  4. 1 tablespoon of amchur (mango) powder
  5. 1/4 cup of cilantro leaves
  6. 2 garlic cloves, peeled and roasted
  7. 1 red chili, chopped.
  8. 1 and a half cups of yogurt

Instructions:

  1. Mash the two garlic peices before making the raitha.
  2. Add the rest of the ingredients (other than the garlic) in a bowl and mix well.
  3. Now add the garlic to the bowl (as in the bowl that has the rest of ingredients in it for this recipe) and mix the raitha again.
  4. Serve!
