Indian Club sandwich

Ingredients:

  1. 1 slice of bread
  2. 1/4 of a cucumber, chopped and sliced
  3. 1/2 an onion, chopped and sliced
  4. 1 cube of aldi happy farms original spreadable cheese cube, chopped into french fry like slices
  5. 1 tablespoon of kerry gold Irish butter

Side: Masala ketchup

  1. 4 tablespoons of Indian chili powder
  2. 1 bottle of organic ketchup

Instructions for Masala Ketchup:

  1. Add the chili powder to the ketchup and mix well. That’s it!
  2. Enjoy!

Instructions for Indian Club Sandwhich:

  1. Heat a large pan on the stove until the pan gets hot.
  2. Once the pan is hot, spread the butter all over the pan.
  3. Once you have spread the butter throughout the pan, add the onions to the pan and allow them to cook for between 3 to 5 minuets.
  4. Once the onions are cooked, keep them aside on a plate or bowl.
  5. Cut the bread slice into halves (each halve should be a triangular shape).
  6. On the same pan, cook two bread slices at a time on both sides. For each halve that you are cooking, you should let each side become brown and once that happens, flip to the other side for that halve.
  7. Add the cheese, onion, cucumber, and tomato , respectively, to one of the halves of the bread (the cheese slices should be in the very bottom, then the onion should be above the cheese slices, then the cucumber should be above the onion, and then the tomato should be above the cucumbers)
  8. Now cover up the toppings on the first halve of the bread slice with the other halve of the bread slice.
  9. Cook until the cheese melts (about 3-5 minuets).
  10. Turn the stove off and serve on a plate with masala ketchup. We are done!!
  11. Enjoy!

Indian vegan rice and almond milk pudding

Ingredients:

  1. 2 cups of rice milk
  2. 5 tablespoons of rose syrup
  3. 2 tablespoons of cardamom powder
  4. 2 tablespoons of agar agar powder
  5. 1/4 cup of almond milk

Instructions:

  1. Put all the ingredients in a pan and cook until the agar agar powder has dissolved in the mixture and everything is mixed together well.
  2. Cook for 5 more minuets or longer if need be.
  3. Now pour the mixture into either miniature cups or one big cup.
  4. Let it set for a few hours until you have a pudding like texture.
  5. Now serve!

Indian coconut brown sugar ice cream- vegan

Ingredients:

  1. 3 cups of cashew milk
  2. 1 cup of brown sugar
  3. 1/2 cup of coconut flesh
  4. 2 frozen bananas
  5. 4 tablespoons of cinnamon
  6. 1 cup of almond milk

Instructions:

  1. Put the ingredients in a blender.
  2. Blend until you have an ice cream like texture.
  3. Put you mixture (from step 2) in a churner (that’s already cold) and churn until ice cream forms.
  4. Serve!

Indian strawberry kulfi

Ingredients:

  1. 2 cups of frozen strawberries
  2. 2 tablespoons of cumin powder
  3. 6 tablespoons of rose syrup
  4. 1/4 cup of soaked cashews
  5. 2 tablespoons of lemon juice
  6. 1/2 cup of water

Instructions:

  1. First blend the cashews and water to make the cashew milk.
  2. Now add the rest of the ingredients to the blender and blend till you have a smoothie like texture.
  3. Put the mixture (from step 2) in popsicles molds and freeze these molds till you have a popsicle like texture for each of them.
  4. Serve and enjoy them!

Indian jackfruit and mango kulfi (a new type of kulfi)

Ingredients:

  1. 2 cups of frozen jackfruit chunks (without the seeds)
  2. 8 tablespoons of rose syrup
  3. 4 cups of almond milk
  4. 2 tablespoons of cumin powder
  5. 1/8 cup of coconut flesh
  6. 1/4 cup of frozen mango chunks

Instructions:

  1. Put all the ingredients in a blender and blend until you have a smoothie like texture.
  2. Pour the mixture into various Popsicle molds and freeze the Popsicle molds until each one (and all) have a Popsicle like texture.
  3. Serve and enjoy! Yum Yum!

Indian mango coconut kulfi (a whole new type of Indian kulfi

Ingredients:

  1. 2 cups of coconut milk
  2. 2 cups of frozen coconut flesh chunks
  3. 1 cup of frozen mango chunks
  4. 3 tablespoons of cinnamon
  5. 3 tablespoons of saffron powder

Instructions:

  1. Put everything in a bender and blend everything until you have a smoothie like texture.
  2. Put the mixture (that you made in step 1) into Popsicle molds and freeze until you get a Popsicle like texture (for each Popsicle in each mold).
  3. Now serve!

Indian kiwi popsicle/kulfi (a diffrent and whole new type of Indian kulfi)

Ingredients:

  1. 2 cups of almond milk
  2. 2 cups of frozen kiwi chunks
  3. 1/6 cup of rose syrup
  4. 8 tablespoons of cardamom powder
  5. 1 cup of mangoes
  6. 5 tablespoons of lemon juice
  7. 1/4 cup of coconut milk

Instructions:

  1. Put all the ingredients in a blender and blend until you have a smoothie like texture.
  2. Now put the mixture (you made in step 1), into various popiscle molds and freeze them until popsicles form in all and each of them.
  3. Serve and enjoy this yummy and unique treat!

Okra pachadi (known as “okra yogurt” in Tamil)

Okra pachadi is an south Indian dish (it stands “okra yogurt” in Tamil). My grandmother lives in a lovely retirement community in the state of Tamil Nadu in India that serves AMAZING south Indian food. This time when I visited her, they served okra pachadi and so here I’ve adapted it and will share it below.

Ingredients:

  1. 1 cup of okra
  2. 3 cups of A2 milk yogurt
  3. 2 tablespoons of mustard seeds
  4. 3 tablespoons of avocado oil
  5. 2 tablespoons of cumin powder
  6. 1 teaspoon of chili powder
  7. 1 teaspoon of salt

Instructions:

  1. Heat up a pan.
  2. As soon as the pan heats up add the oil and the mustard seeds to the pan.
  3. As soon as the mustard seeds pop, add the cumin powder, chili powder, and salt to the pan and mix them well.
  4. Now add the okra to the pan and cook until the okra has softened and has infused well with the other ingredients in the pan (about 8 to 10 minuets).
  5. Let the mixture from the pan cool for about 5 to 8 minutes.
  6. Now put the yogurt in a bowl and whisk it well.
  7. Finally, add the okra mixture to the yogurt and mix everything well.
  8. Serve and enjoy this amazing pachadi.
